5-minute Salmon Salad
My roommates will attest to this, I'm either starving (especially after my late day workout) or completely full.
When the former happens, there is nothing better than throwing a whole whack of colourful veggies and some lean protein on a plate, crumbling some beautiful goat feta on the top and zesting it with a splash of lemon juice. It's low-fat, low-carb and super high-protein. Plus, it's a one-dish, no clean-up dinner that should take you, unless you're a spaz, no more than 5 minutes flat.
- large handful baby spinach
- 5 oz lox (smoked salmon)
- 6 cherry tomatoes, cut in half
- 3 baby beets, sliced in quarters*
- 1 oz (size of a walnut) low-fat feta cheese**
- squeeze of lemon
- salt and pepper
* Make sure to use the unsweetened
beets - lots of hidden sugar in such items!
** I find the feta has enough
creaminess to compensate for salad dressing, but you can always add some
good, flavourful olive oil if you so desire.
