Date Butter Recipe
Date butter in itself doesn't really deserve a whole blog, even though it works miracles to replace fat while providing an almost magical richness to cakes, muffins, bars and cookies. The recipe should take you all of a minute to prep, and only 10-20 min to cook.

You'll need:

  • Dried dates, prunes, or raisins (the amount doesn't really matter)
  • spices (cinnamon, nutmeg, cloves, ginger are good)
  • water and lemon juice (if you have it)
Cover dried fruit by about 2/3rds water and a splash of lemon juice (if you have any) in a saucepan (you can use however much fruit you'd like, and combine types)

Add your spices - to taste

Bring to a rolling boil

Partially cover (to let steam/moisture escape) and turn heat to low

Depending on the moisture content of your fruit (and how much water you've added), it might take as little as 10 minutes to as long as 30 to cook. You'll know it's done when the fruit is soft, a spoon can stand upright in the mixture and it doesn't run back to the edges of the pan when pulled away

Either smash down with a spoon or blend for a smoother consistency

Let the butter cool and store in the fridge (will keep for a couple weeks, or until the next ice age in the freezer)

Fantastic served with creamy cheeses and whole wheat toasts as a treat

Date butter is used in many of my baked products - keep an eye out for these goodies!

Bon Appetite!
