Caplansky’s to Open Two Pearson Outlets

Tourists and residents alike will be able to try out Toronto's finest smoked meat at “Caplansky’s Deli” and “Caplansky’s Snack Bar” by the summer

Caplansky’s to Open Two Pearson Outlets

Caplansky’s, the popular deli mini-empire run by Toronto’s own Zane Caplansky, has announced plans to open two concession areas inside Pearson Airport.

Caplansky will open ‘Caplansky’s Deli,” offering “A traditional Jewish deli offering breakfast plates, heaping deli sandwiches, and home-style dinner entrees,” and “Caplansky’s Snack Bar,” which will offer “simmering hot sandwiches made-to-order and other grab and go snacks,” said HMS Host, the managing body for food and beverage operations at Pearson.

The outlets are expected to open in summer 2014.


Caplansky will join star chefs Susur Lee and Mark McEwan, who are both opening brand extensions at Pearson. The stars were recruited by Roger Mooking, the Toronto chef and television personality, who was given the assignment of choosing chefs for Pearson.

“It’s one of those crazy moments when someone you’ve admired and watched on TV is calling to ask you to join his team,” said Caplansky, speaking of the surprise phone-call from Mooking that initiated the deal. “Delis and the people who operate and patronize them are an important part of the fabric of this city. I think our authenticity is what appealed to Roger and HMS Host.”

In addition to a flagship College street deli, cult-favorite food truck, and the forthcoming airport restaurants, a fourth Caplansky's restaurant will be opening in a still as-of-yet named location. As such, Caplansky is building a 6,000-square-foot food production facility in Toronto’s west end.

“The facility will allow us to maintain the quality and consistency our customers expect in the three restaurants, our catering business, and in the food trucks,” he told the Jewish Daily Forward.

The facility should open in the late spring and should allow for Caplansky to expand even further, hopefully going beyond retail. “The Big initiative for the next few years will be the growth of our grocery store products. I think four restaurants, food trucks (yes there will be more), a great catering business and grocery store take-home deli products are enough for the foreseeable future.
