The Nosh Pit - Kosher Greek Recipes

In the spirit of the Olympics, let’s take a gander at these kosher Greek recipes.

It could get messy, but it will always be memorable. Every week in the Nosh Pit, we’ll lead the gathering of an impassioned group of foodies, offering delectable dishes, seasonal treats, and other goodies to nosh upon.

We’ll introduce the timely scenario – what to bring to an obligatory sports party or contribute to a spring picnic--and share some auspicious recipes. Spice up a soiree, diversify your dinner, or help convince those reluctant souls that ‘soy substitute’ is not synonymous with ‘stale.’

Recipes are best shared, passed from one sated soul to the next, with everyone adding just their own flair, and creating endless yummy possibilities. At a concert, people shed inhibition and share passion in a moment of synergy and excitement; they will do the same in the Nosh Pit, directing their unparalleled enthusiasm towards food.

Kosher Greek Food

In the spirit of the Olympics, let’s take a gander at these kosher Greek recipes.


Greek Slaw from Joy of Kosher

Ingredients:

1/4 cup lemon juice, about 2 lemons

2 tablespoons Elea Organic Extra Virgin Olive Oil from Greece

2 teaspoons dried or fresh oregano

1 clove garlic, minced

16 ounces shredded cabbage

2 Persian cucumbers, julienned

1/2 red onion, sliced thin

1/2 cup kalamata olives, with or without pits

1/2cup crumbled feta cheese

Directions:

Whisk lemon juice, olive oil, oregano and garlic in a small bowl or shake in a jar. In a large deep platter or bowl, toss cabbage, cucumbers and onions with dressing. Add olives and cheese and serve. Enjoy!


Dimitri’s New Year Sweet Bread (Vasilopita) from Kosher Delight

Ingredients:

2 packages, dry Yeast

3/4 cup, warmed Milk

5 cups Flour

4 Eggs

1 teaspoon Sea Salt

3/4 cup Sugar

grated Lemon rind

1/2 cup, melted Butter

1 Eggs

Sesame seeds

Almond halves

Directions:

Dissolve yeast in warm milk. Add 2 cups of the flour, and beat batter until smooth. Cover and set in a warm place for about an hour. Beat eggs, salt, sugar and lemon rind over hot water. Stir mixture into batter; add remaining flour and knead, adding gradually the melted butter, until smooth and elastic. Cover with a cloth and let it rise in a warm place until it has doubled its size - about 2 hours. Knead dough and put in a buttered deep round baking dish, about 12 inches in diameter. Cover and leave in a warm place until almost doubled. Brush with lightly beaten egg and sprinkle with sesame seeds, or garnish with blanched halved almonds. Bake in a moderate oven for about 45 minutes. When cold, make a small cut underneath with a knife and insert the gold or silver coin. Enjoy!


Greek Garlic Chicken from Kosher Kitchen

Ingredients:

1 chicken, cut into eighths
1 onion, cut into large chunks
1 lemon
6-8 sprigs fresh oregano
5 cloves garlic, halved
salt
pepper
1/4 cup olive oil
1/2 cup white wine
3/4 cup kalamata olives, pitted and coarsely chopped
1/4 cup kalamata olives, whole for garnish

Directions:

Preheat the oven to 450 degrees. Place the chicken pieces in a single layer, skin-side-up in a 9x13 baking dish. Add the onion chunks. Slice the lemon in half lengthwise. Squeeze the lemon halves over the chicken. Cut each lemon half into 4 pieces, add to the chicken. Set aside 2 sprigs of oregano and strip the leaves from the rest. Scatter the leaves and stripped sprigs over the chicken. They will add their perfume to the dish. Add the garlic and season with salt and pepper. Drizzle with the oil and wine. Toss the mixture together. Sprinkle the chopped olives over the chicken. Bake, uncovered, for 45min - 1 hour, or until chicken is fully cooked and no longer pink, or a meat thermometer inserted into the thickest part of the thigh reads 180 degrees. Transfer to a platter and garnish with whole olives and reserved oregano sprigs. Enjoy!
