Some Cheesy News: Israeli and Amish Cheese-Masters Create New Feta

Ezra’s feta cheese is quickly becoming a snack sensation. Born of a recent deal between an Israeli dairy manufacturer and an Amish cheese company in Ohio, Ezra’s feta is not only kosher, but also free of hormones and antibiotics due to the organic dairy used in production.

Gad Dairy, the fourth-largest dairy manufacturer in Israel, was looking for an American dairy partner to produce kosher cheeses for the U.S. market. Sarah Horowitz, an agricultural initiative program director who was instrumental in the deal, stated that Gad was very selective about who they wanted to go into business with:

“Gad Dairy was drawn to a family-run business because they’re a family-run business,” Horowitz said. “Bunker Hill has been operated by a family of four generations, and that’s one reason why they were a match.”

Bunker Hill Cheese is indeed a family owned company, based entirely out of Ohio, which sources all their milk from Amish farmers. Bob and Lisa Troyer of Bunker Hill were already interested in making a Mediterranean style cheese when the partnership with Gad was suggested. The match was ideal, combining the expertise of Israeli cheese makers with the organic, local dairy of Amish farmers.

The resulting product isn’t a typical feta, according to Tzvika Dor, director of business and development at Gad Dairy.

“Other feta is crumbly,” Dor said. “[Ezra’s] is smooth, and creamy enough to be eaten with a spoon.”

Next up for the Ezra’s brand is the launch of a new spreadable cream feta in chocolate, roasted red pepper and garlic and herb flavours.
