The Nosh Pit - Refreshing Kosher Watermelon Recipes

It could get messy, but it will always be memorable. Every week in the Nosh Pit, we’ll lead the gathering of an impassioned group of foodies, offering delectable dishes, seasonal treats, and other goodies to nosh upon.

We’ll introduce the timely scenario – what to bring to an obligatory sports party or contribute to a spring picnic–and share some auspicious recipes. Spice up a soiree, diversify your dinner, or help convince those reluctant souls that ‘soy substitute’ is not synonymous with ‘stale.’

Recipes are best shared, passed from one sated soul to the next, with everyone adding just their own flair, and creating endless yummy possibilities. At a concert, people shed inhibition and share passion in a moment of synergy and excitement; they will do the same in the Nosh Pit, directing their unparalleled enthusiasm towards food.

Refreshing Kosher Watermelon Recipes

Finally, it’s here – summer has officially arrived. Now that we are blessedly in the thick of it, what better time to ponder the unofficial food of summer: the watermelon. Take a look at these quick and easy kosher recipes starring that most magnificent of foods.

Halloumi and Watermelon Kebabs from Feastie

Ingredients:

250g halloumi cheese

250g watermelon

Olive oil

Directions:

Cut the halloumi and watermelon into 2-2.5cm cubes. Thread alternately onto skewers, and brush the cheese with a little olive oil. Heat the griddle pan on a high heat. Cook the skewers for a few minutes on each side, until the cheese is crispy and scorch-lines have appeared. Serve at once, and enjoy!

Watermelon Mocktail from Joy of Kosher

Ingredients:

1 cup watermelon puree

1 teaspoon grenadine syrup

juice from 1 orange

1 tablespoon granulated sugar

2 cups ice cubes

Directions:

Place all of the ingredients in a martini shaker and shake for 20 seconds. Strain the chilled liquid into a sugar rimmed martini glass. Enjoy!


Watermelon and Hearts of Palm Tower from Joy of Kosher

Ingredients:

16 piece large melonballer scoops of watermelon (yellow or red)

1 tablespoon fresh squeezed orange juice

1 tablespoon fresh squeezed lemon

1/2 teaspoon chopped mint

1/4 cup chopped watermelon

1 can hearts of palm (14 oz) (jar will work)

2 tablespoons herbed goat cheese (room temp)

1 teaspoon chopped garlic

1 tablespoon chopped scallion tails

2 teaspoons chopped basil

4 piece whole wheat bread, toasted (crusts removed)

1 1/2 cups assorted mixed greens

Directions:

Make some watermelon balls with watermelon baller, and dispose of any seeds. Marinate melon balls in a bowl with orange juice, olive oil, and mint. Set aside at room temperature. Use leftover scraps of watermelon for dressing. Cut the four hearts of palm into 2-in pieces. You will end up with 16 2-in pieces of hearts of palm Mix together cream cheese, watermelon, goat cheese, garlic, scallion tails and basil. Season with salt and pepper, if desired. Spread on top of toast. Place four pieces of hearts of palm in center of the plate. Top with bread. Place four watermelon balls on top of each toasted slice of bread. Top small amount of mixed greens tosses with Watermelon Salad Dressing. Enjoy!
